Buffalo Chili mmmmmmm…

Tonight’s dinner was buffalo chili from the recipe in The Primal Blueprint Cookbook.

This meal was seriously yummy and filling!  Here is a link to Free The Animal with some nice photos of said chili, and basic directions for preparation  There are a couple of options in this recipe.  I used 1 lb of Buffalo, and 1 lb of grass-fed ground beef, 2 oz of pancetta supplemented with 2 strips of bacon.  I also added about a tablespoon of coconut oil, and I substituted 1/2 teaspoon of cayenne pepper in place of the paprika.  The next time I make it I will probably add some additional veggies.  I am thinking some celery and some red pepper would do nicely.  One word of caution… This recipe takes quite a while to cook, so it should be made on a weekend, when hungry kids are not waiting for supper.

So, How is everybody feeling at the end of day #3 of the Paleo challenge?  I am starting to feel pretty good, and looking forward to what the next couple of days have in store.
